Blueberry Cake

When I was growing up I lived in a house full of wonderful cooks. My grandmother, mother and two sisters cooked and baked all the time. There were always goodies of one sort or another readily available for a growing boy. One such goodie which stands out in my mind was my mothers blueberry cake. 

The blueberry cake was so good I stumbled upon an entrepreneurial opportunity at school . You see my classmates also loved that blueberry cake and would pay handsomely for a piece of it as well as the many other assorted goodies I would bring to school on a regular basis. My mother of course was delighted. She knew how much I liked those goodies because I always asked for an extra piece.

I soon found that I had became a very successful businessman. I was making money hand over fist selling my mothers blueberry cake. That is, until the great crash. It so happened one day my mother bumped into one of my best customers. He couldn’t wait to compliment her on her wonderful deserts. Of course she asked how he could possibly know about her baking and he of course couldn’t wait to proudly tell her that he buys a piece from Gordon almost every day. Things quickly came to a halt. My supplier of goodies went on strike and I was out of business.

Ingredients;

1/2 lb butter
2 cups of sugar
4 eggs
3 cups of flour
2 tsp baking powder
2/3 cup of milk
1/2 tsp. salt
3 cups blueberries
2 tsp. vanilla

Instructions;

  • Cream butter, add sugar and cream together. Beat eggs and add to mixture.
  • Sift flour, baking powder and salt together. Add alternately with the milk – then add vanilla.
  • Pour half the batter into well greased 13" oblong pan.
  • Cover with blueberries. Cover with remaining batter.

  • Bake at 350° for 35 minutes.
