Try this spicy, tasty peanut soup for something easy and different.

African Peanut Soup
1 pound Planters dry roasted salted peanuts 1/2 tsp. cayenne pepper
2 tablespoons. peanut oil 1/2 tsp. salt
1 large Spanish onion chopped 1- 28 oz. can crushed tomatoes
2 celery ribs, chopped 6 cups water
2 leeks, well rinsed and chopped 1/2 cup chopped scallions
2 tsp. sugar 1/2 cup heavy cream
2 tsp. curry powder 1 tsp. minced garlic
2 tsp. ground cumin
Put peanuts in food processor and grind until peanuts have become a thick paste. Set aside. Over medium heat in a soup pot, heat the oil and add onion, celery, leeks, scallions, and garlic and sweat for four minutes until tender. Stir in all spices. Add the tomatoes, peanut paste and water and bring to a boil. Reduce heat to low and simmer uncovered for one hour. Stir in cream just before serving.
For a more substantial soup, you can toss in some chopped, cooked shrimp, chicken or tofu. This soup freezes beautifully. It's different and very delicious.
